Corn Smut is an edible pathogenic fungus that grows on organic non-GMO sweet corn. Considered a delicacy in central America, and a disease to farmers in North America. This fungus is delicious and and is quickly becoming something desired in the culinary realm. The flavor is of sweet corn with a deep earthy fungus similar to white button mushrooms. There are few farmers in USA that grow this fungus on sweet corn. It is recommended to make a liquid culture, then injecting that into young small growing ears of corn through the “silk” or the top of the ear.
